Baileys Pink Pitaya Punch

This show-stopping three-layered Baileys dessert is the best Eurovision treat to get your taste buds singing along to every song!

Ingredients

  • 150g raspberries
  • 1 tbsp caster sugar
  • 125ml double cream
  • 80g 70% dark chocolate
  • 2 medium eggs, separated
  • 2 tbsp caster sugar
  • If you’re short on time (or if you prefer to), you can buy pre-made chocolate mousse.
  • 100ml double cream
  • 1 tbsp caramel sauce
  • 50ml Baileys Original Irish Cream
  • Choose from wafers, chocolate curls, cake-decorating pearls, caramel sauce or caramelised popcorn – or all of the above if that’s your style. You can even add some extra Eurovision-style sparkle with edible glitter!

Directions

Pop your raspberries into a food processor (a hand blender works just as well) and whizz them up until smooth, then sieve the pureed raspberries to remove the seeds. Next, stir through the caster sugar. Now whisk the double cream until it makes soft peaks and fold it into the pureed raspberries. Divide the mixture between two 250ml glasses and put these into the fridge to set.

(You can use ready-made chocolate mousse if you want to skip this step) First, melt the chocolate in a small bowl over simmering water (or you can use the microwave). Once all the chocolate is melted, let it cool slightly – about 5 minutes should do it – then stir through the egg yolks. Your mixture should start to thicken up. Next, whisk the egg whites until they form stiff peaks and begin to add the caster sugar slowly. Your egg whites should become lovely and glossy and thicken up. Take half of your egg white mixture and stir it into the chocolate – make sure these are combined well! Once you’ve done this, gently fold in the other half of the whisked egg whites. Now get your glasses with the raspberry puree out of the fridge and gently spoon the chocolate mousse over the top. Give each glass a gentle tap to level out the chocolate and pop them back into the fridge.

Whisk up the cream and Baileys until you have soft peaks that hold their shape. Grab your dessert glasses from the fridge and spoon the cream onto the top. Put them back into the fridge for at least 15 minutes to properly set.

Now is your time to shine! Get your set desserts from the fridge and top with your favourite toppings – we love chocolate, wafers, cake decorating pearls, caramel sauce or caramelised popcorn (or all of these!) Finally, finish with some extra Baileys on top and enjoy douze points all round at your Eurovision party!
